Glass has a certain grandeur which Michael Attenborough's contemporary classic redesign has softened, the ambience is now light and modern. Glass certainly retains an air of fine hotel dining with calm, attentive service, but since the arrival of competition-winning chef Chris Driver and his new seasonal Modern British Menus, it's suddenly got a bit special. Chris is a Londoner with piercing eyes that suggest he's somewhat driven, its an understatement. He is a traditionalist and a perfectionist, come to Glass for flavours that require intricate professional techniques. That's not to say that the food is complex. Chris' seasonal menu features carefully sourced native ingredients like Norfolk lamb and Scottish turbot and two or three carefully chosen complimentary flavours or textures.What's cooking?Seared sea scallops, parsley mash, baby fennel & lemon confit and Guinea fowl, roasted root vegetable pan juice and the hottest seller on this season's menu is Lancashire hot pot (like none other!). Glass is about confident British food, given an adult and rather luxurious edge.
