The Sheraton Skyline at Heathrow, in which Sage finds its home, serves a sophisticated, international clientele, and Sage is generally a hit with all nationalities. It is a buzzy, modern restaurant featuring an eclectically interational menu - do we sense a theme developing here? The courses aredivided into small and larger, rather than starters and mains. Considering that guests are bound to be suffering six kinds of jetlag, this elasticity of service is most welcome. It's a great place to do business, make friendly farewells before putting someone on a plane, or for falling intofor some grownup relief after a day at Legoland. The menu features smallcourses like sauteed scallops with pea risotto, and Serrano ham and mash,larger courses include roast pork belly on apple, artichoke and veg hash, and game pie with rich gravy, roasted chestnut and potato and turnips cooked in cream. There is also a menu of simple grills served with a choice ofeight sauces - including HP - and a nice selection of puds and cheeses. The recommended wines are helpful and the staff are friendly.

While you can make a group booking, you can't hire Sage exclusively. No matter because there are several private rooms to tempt you. The Pacific fits 50, the Atlantic, 80. But the big banqueting daddy is the 450-capacity International Suite, which can be split into three individual sections. Fifteen smaller function suites clustered around the main conference lobby and conservatory (cue natural light in most of the rooms) are perfect for groups of up to 30. Naturally, a generous range of modern international menus are available. NB. A drinks only menu is available exclusively in the 350-capacity tropical Sky Garden.
